“Sometimes, the food is the best part of the journey.” Trying new foods is definitely one of my favourite parts of travelling, but in this case the quote actually refers to the food that we eat whilst in the car on a road trip or on a plane to some far off destination. Yep, this month’s theme is travel snacks and mini meals!
I tend to pack light when it comes to travel snacks- generally a fun-size chocolate and some water is all I need for a car trip and the last ‘meal’ I snuck on a plane were Vegemite and cheese sandwiches. Not very adventurous at all eh?!
So when I turned my mind to a travel snack I thought it needed to be something small and portable, something that would provide long lasting energy but also give that little sweet hit to satisfy sugar cravings. My one tip with these fruit and oat fingers is not to overcook them- my first batch were like rubber!
Fruit and Oat Fingers
Preparation Time: 10 minutes
Baking Time: 15-20 minutes
Makes: 16 fingers
3 large bananas, mashed
3 cups rolled oats
2 tablespoons flax seeds
¾ cup chopped dried dates
¼ heaped cup raisins
¼ cup chopped dried apple
1 teaspoon vanilla
¼ cup olive oil
¼ cup maple syrup
- Pre-heat oven to 180°C (160°C fan-forced) and line a 16cm x 25.5cm slice tray with baking paper
- Place all ingredients in a large bowl and mix until well combined
- Press mixture evenly into the prepared tray with the back of a spoon
- Bake for 15-20 minutes. Cool on a wire rack before cutting into fingers
