Peppermint Hot Chocolate (The Recipe ReDux)

OK, winter has arrived *sob*. Cue the bitter cold, wind, rain and the general feeling of blerg that descends over everyone…actually there is no need to cue the miserable weather, as it is already here!!

Can you tell I am not a fan of winter?

Clearly this meant I was only ever going to create a warm, cosy and comforting recipe for this month’s Recipe ReDux. Except the theme this month was creating a healthy recipe with alcohol…but I don’t drink a lot of alcohol, let alone cook with it! When my attempt at a beef bourguignon ended up tasting like red wine stew I gave up on the notion of using alcohol in cooking. I am NOT a fan of that alcohol taste in my food!

So with wine, spirits and liqueurs out the window, I had to embrace the ‘essence’ element of this theme. You know; vanilla essence, coconut essence, coffee essence etc.

And so the peppermint hot chocolate was born, with only the TINIEST amount of peppermint essence added – that is as boozy as I am going to get!

Peppermint Hot Chocolate

Cosy, rich and comforting, this hot chocolate is the perfect antidote to winter.

Ingredients
  • 250ml milk
  • 20g dark chocolate, chopped finely
  • Peppermint essence
Method
  1. Place milk in a small saucepan over medium heat and bring to a simmer
  2. Add chocolate and whisk until melted
  3. Whisk in one drop of peppermint essence at a time until you achieve a peppermint flavour to your liking (note that the peppermint flavour intensifies once the drink is left to stand, so you might want to go easy to start with!)
  4. Serve and enjoy!

    This is great! Normally when I make hot cocoa I add cinnamon, nutmeg or mixed spice to it. But I’ve had this idea to add peppermint essence because I always loved Mint Slice biscuits and so to me mint and chocolate go together, yet I’ve never done it. It’s now on the agenda for tonight!

      YES! Mint Slices are one of my faves too! I don’t add spices to my hot drinks, but I have had take-away coffee before that had cinnamon sprinkled on it…still can’t decide if it worked or was just sacrilegious!

    I hate winter too!!!! Where can you get peppermint essence? Just from the supermarket? What else do people usually use it for? (baking?) Sorry – I’m not much of a cook! x

      Hi Viv, yes you can get peppermint essence from the baking section of supermarkets. I had my bottle sitting in the cupboard- I can’t actually remember why I bought it in the first place!! I imagine it was for a biscuit or slice recipe…

    The best thing about winter is definitely the hot drinks and you can’t beat a cup of hot cocoa to warm yourself up on a gloomy day. Love the idea of adding in a touch of peppermint, thanks for sharing! ps. only four weeks until Spring – the countdown has begun ;)
