OK, winter has arrived *sob*. Cue the bitter cold, wind, rain and the general feeling of blerg that descends over everyone…actually there is no need to cue the miserable weather, as it is already here!!
Can you tell I am not a fan of winter?
Clearly this meant I was only ever going to create a warm, cosy and comforting recipe for this month’s Recipe ReDux. Except the theme this month was creating a healthy recipe with alcohol…but I don’t drink a lot of alcohol, let alone cook with it! When my attempt at a beef bourguignon ended up tasting like red wine stew I gave up on the notion of using alcohol in cooking. I am NOT a fan of that alcohol taste in my food!
So with wine, spirits and liqueurs out the window, I had to embrace the ‘essence’ element of this theme. You know; vanilla essence, coconut essence, coffee essence etc.
And so the peppermint hot chocolate was born, with only the TINIEST amount of peppermint essence added – that is as boozy as I am going to get!
- 250ml milk
- 20g dark chocolate, chopped finely
- Peppermint essence
- Place milk in a small saucepan over medium heat and bring to a simmer
- Add chocolate and whisk until melted
- Whisk in one drop of peppermint essence at a time until you achieve a peppermint flavour to your liking (note that the peppermint flavour intensifies once the drink is left to stand, so you might want to go easy to start with!)
- Serve and enjoy!
